Tokubetsu Junmai
Showcasing the natural flavour of Hyogo’s Yamadanishiki rice grain, polished until only 60% of the grain is left, this sake has a satisfyingly umami rich flavour profile which is rich but refreshing. A clean and well-structured traditional brew.

Ingredients for 2 people
Wagyu rib steak
2 Wagyu rib steaks
300 g of Japanese rice
2 eggs
Peppered miso sauce
10 tablespoons of soy sauce
5 tablespoons of mirin
1.5 tablespoons of sugar
1 tablespoon of red miso
50 g of butter
1 teaspoon of black pepper
Wagyu rib steak
Cook the rib steak with a drizzle of oil, 1 minute on each side, and add a knob of butter at the end of the cooking time. Set aside for 5 minutes.
Peppered miso sauce
In a saucepan, reduce the ingredients until obtaining a syrupy texture.
Rice preparation
Put the rice into a pot and add 390 ml of water. Bring to a boil over high heat, with no cover. Lower the heat and simmer for approximatively 15 to 20 minutes.
Serve
Cut the meat into thin slices, put on top of the rice and add the sauce.
